Spiceology’s Escabèche (Taco Pickles) Recipe

Taco Pickles, otherwise known as escabèche is a condiment available on store shelves in lots of areas of the US, so you might wonder, “Why should I spend the time making my own escabèche when I could just spend $5 for a jar from a big brand?” The answer is pretty simple – for one thing, making it is easy and only takes about 15 minutes total. The other reason is, you can use your own very fresh vegetables and herbs then experiment a little with your preferred flavor profile. For example, if you need a bit more heat in your flavor profile, substitute the jalapeños with something further up the Scoville rating scale, such as a serrano or a habanero pepper.

Besides being easy to make, escabèche is a very versatile side dish. It can be eaten by itself, it can be used as a meat marinade component, it can be a topping for your favorite Mexican dishes. It’s a welcome addition anywhere you will need a spicy, vinegary crunch. So here is the quickest and easiest way to make escabèche that we know, courtesy of our friends at Spiceology.

Escabèche Ingredients:

  • 8-10 carrots (orange, purple or white are fine), sliced thin
  • 12-14 radishes, sliced thin
  • 4 jalapeños, sliced (removing seeds will reduce heat)
  • 2 cup cilantro, chopped
  • 3 cups distilled white vinegar
  • 1 cup apple cider vinegar
  • 1 cup white sugar
  • 4 teaspoons Spiceology Pickling Spice, divided

Cooking Instructions:

Add the vinegars and sugar together in a small saucepan over medium-high heat. Bring to a boil then allow to cool.

Pack your vegetable mix into canning jars and apply just a bit of pressure to make room for more pickling spice and brine. Top each with jar with pickling spice.

Carefully pour half of your brine over the mix in the jars and then allow a little time for all the air bubbles to release.

After allowing the mason jars to cool, place the jar seals on and refrigerate for a few hours before serving.

Refrigerated escabèche will last up to 3 months.
