The newest era for them began in their custom butchery shop, Whitefeather Meats, as brothers Seth and Scott Perkins created a popular YouTube channel showcasing their meat cutting shop skills for amateur cooks who were looking to up their BBQ game. The channel became very popular for their informative content and along the way their brand name gained lots of recognition. To coronate their brand partnership with Ace, they sent us a recipe and a video detailing their traditional way of cutting a whole chicken before putting it on the grate of a smoker. And they put it on a plate with a couple of sides that make a wonderful meal your friends and family will instantly love.

Bearded Butcher’s Flat Cut BBQ Chicken

Prep Time: 5-10 minutes.
Cook Time: 40-50 minutes.

Flat Cut BBQ Chicken Cooking Ingredients:

• Whole fresh chicken (4-5 lbs.)
Bearded Butcher Blend Hollywood Seasoning (or your preferred BBQ seasoning)
• BBQ Sauce of your choice

Flat Cut BBQ Chicken Cooking Instructions:

1. Prep the Chicken: The way Bearded Butchers prefer it done is the Flat Chicken Method. You can watch a quick video of how they do it right here.

If you’re not ready to try that method yet, then you should simply Spatchcock the chicken using kitchen shears to remove the backbone and flatten the chicken for a more even distribution of heat through the meat.

2. Season generously with Bearded Butcher Blend Hollywood Seasoning.

3. Preheat your grill or smoker to 375-425 degrees Fahrenheit. Place the chicken skin-side up (if using skin) on the grill or smoker.

4. For juicy results, use indirect heat for most of the cooking time. This means placing the chicken away from the direct flame or heat source.

5. Cook the chicken until the internal temperature in the thickest part of the breast reaches 155 degrees Fahrenheit.

6. For crispy skin, crank up the heat to high (around 425 degrees Fahrenheit) in the last 10 minutes of cooking. Move the chicken directly over the heat source to crisp the skin.

7. During the final 10 minutes, you can baste the chicken with BBQ sauce for a sweet and smoky glaze.

8. Once the internal temperature reaches 165 degrees Fahrenheit in the breast, remove the chicken from the heat and let it rest for 5-10 minutes before carving. This allows the juices to redistribute for a more flavorful and tender chicken.
