Candied Bacon by Megan Day

Megan Day’s Candied Bacon Ingredients:

Pre-heat your oven to 400° F.
Line sheet pan with foil and lay strips of bacon onto the wire rack. Coat one side of each piece of bacon in brown sugar and then sprinkle with your favorite BBQ Rub.

Place rack of coated bacon in 400° F oven for 10 minutes. Leave bacon in oven but turn heat off. Do not open the door. After 5 minutes check on bacon. Once the tips start to turn dark, remove rack of bacon from the oven. Allow to cool and serve.

TIPS:
Try not to open the oven door until you have to.

Once you sprinkle the bacon with sugar and rub, lift up the rack and shack off the sheet pan to remove any sugars that fell through the wires.

Ovens vary in temperature. Watch the edged of the bacon. Once they turn, the bacon out of the heat. Allow them to rest and cool down before serving.

You can make these ahead and freeze them. Place a wax paper between each piece to prevent sticking once they start to thaw.
