Here’s how to make Meat Mitch Whomp! Candied Bacon Yams!

Recipe for Candied Bacon Yams by Mitch Benjamin

Candied Bacon Preparation:

Separate 8oz classic strips of bacon (not thick cut) on an oven-safe wire rack placed over a foil-lined baking sheet or a tin

Sprinkle a thin cover of light brown sugar on each slice

Follow with a dusting of Meat Mitch Whomp! Rub

If desired, you can add a light sprinkle of Red Pepper Chili Flakes

Set your oven or smoker at 375F. I recommend placing the bacon on an oven-safe-wire rack placed over a foil-lined baking sheet. The wire rack will help the bacon cook and get crispy, and the foil will make for easier cleanup! Situate the strips perpendicular to the wire rack so the bacon doesn’t fall through as it cooks.

Depending on the bacon you use, you may need longer or shorter baking times. It’s a good idea to start checking the bacon at 18 to 20 minutes, and it might need up to 25 minutes to get really crispy.

Remove, cool and break into smaller pieces for topping sweet potatoes

Directions for making candied pecans to mix into Candied Bacon Yams by Mitch Benjamin

Candied Pecans Ingredients and Preparation:

Melt butter and mix all ingredients together in a pot on low heat until sugar is dissolved.

Place pecan mixture on a baking sheet and spread out.

Bake at 350 degrees for 5 minutes.

Let cool and then chop up for topping the sweet potatoes along with the candied bacon.

Candied Bacon Yams Ingredients:

  • 3 medium size peeled sweet potatoes
  • 1/3 lb butter
  • 1/4 Cup cream
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp all spice
  • 1 TBSP Meat Mitch Whomp! Rub

Boil potatoes until tender. Mash potatoes and mix with butter, cream and spices above.

Top with Whomp! Candied Bacon and Pecans, and you can also add sliced green onions if you wish. Serve and enjoy!
