As we move into fall tailgating season, we asked our friend Matt Pittman from Meat Church for a big crowd-pleasing favorite with a few conditions; it needs to be easy to make, it needs to be budget-friendly, and it needs to be a twist on an old favorite. We think he nailed it when he sent back Spicy Bratwurst Popper Boats.
If you have limited time and room for your pre-game buffet, this is just perfect, because they’re a quick cook, but they are filling, so you’re game-ready after just one or two! Here’s how to make them.

Spicy Bratwurst Popper Boats Ingredients:
- 5 fresh bratwurst
- 1 C, whipped cream cheese
- 1 C, Sharp Cheddar or Monterrey Jack, freshly shredded
- 2 Tbsp, pickled or fresh jalapeños (sub fresh if you want spicy)
- 1 Tbsp, Meat Church Honey Bacon BBQ seasoning
- 15 slices of fresh jalapeños if you want more heat after cooking

Spicy Bratwurst Popper Boats Cooking Instructions
Allow a few minutes for your smoker to get up to temp and stabilize it at 300F. Any smoker that uses wood chunks, chips or pellets will be just fine for this cook. You can also use any wood for this recipe, since the cook is so quick. We have never had to spend longer than 40 minutes getting the bratwurst temperatures, so remember you don’t have to burn up a large quantity of wood, pellets or charcoal.

Gather your ingredients to prepare the mixture of cream cheese, cheddar cheese, fresh or pickled jalapeños & Honey Bacon BBQ seasoning in a medium sized bowl. Mix with a wooden or metal spoon to combine, cover the bowl with a hand towel and set aside.
Pierce the casing and cut a slit length wise down the entire bratwurst. Using your fingers, or a small spoon form the bratwurst into a boat.
