Loaded Breakfast Fries Ingredient List:
- 1 bag seasoned potato wedges
- Avocado oil spray
- 1lb bacon
- 8oz Colby Jack Cheese – Shredded
- Green onions
- Pickled or fresh jalapeño pepper slices
Ingredients for Sausage Gravy:
- ½ lb breakfast sausage
- 1-2 tablespoons bacon and sausage grease
- 1-2 tablespoons all purpose flour
- 3-4 cups whole milk
Ingredients for Home-made Ranch Dressing:
- 1 cup buttermilk
- 1 cup mayonnaise
- 2 tablespoons Ranch mix
Make ranch dressing by adding buttermilk, mayo, and Ranch seasoning into a medium sized glass bowl and mix well with a whisk. Set in refrigerator until cool. It might also be wise to make the dressing the night before you make the loaded breakfast fries, just to let the flavors mature.
Cooking Directions for Loaded Breakfast Fries
Pre-warm griddle on low heat. While it comes up to temp, grate the cheese and set aside.
Spray griddle with avocado oil spray or use avocado oil, about 1 tablespoon. Cook potato wedges till done, flipping and moving around about every 3 mins. It should take about 15 minutes to get them all the way done.
Add bacon to the griddle and cook till done. Once finished, remove bacon and chop into medium sized chunks.
Add sausage and cook till done.

You can make your Loaded Breakfast Fries spicy or savory. Your only limit is your imagination when it comes to toppings.
Place an aluminum pan on the Blackstone griddle. Add grease from the bacon and sausage, about 2-3 tablespoons. You may also use butter or Bacon Up.
Add 2-3 tablespoons flour and cook till for 2-3 mins.
Add milk slowly and whisk well.
Add sausage to the gravy and mix well. If it gets too thick, add more milk.
Season gravy with Essentials and Hatch Chile seasoning. Cover the container and set aside.
In a small aluminum sheet pan, add finished potato wedges first.
Add half the shredded cheese. Then using a regular spoon, add gravy on top of the cheese. Then place the rest of the shredded cheese on top.
Add chopped bacon to the top, along with Ranch, green onions, and jalapeños.
