Cast Iron Pigs In a Blanket by Ooni

Some classic dishes always seem to have some nostalgia attached to them. S’mores, Ice Cream Floats, Ballpark Nachos.  Some of us may have had our first Pig In a Blanket on the side with some homemade soup as a kid. Others may have had their first while picking from the tailgating buffet. Do you remember your first?

This time, our friends at Ooni brought this recipe back and leveled up the flavor while cutting back on the cook time. You can get a cast iron pan full of a dozen Pigs In a Blanket ready in just over 8 minutes with an Ooni. Like all tailgate classics, this recipe is easy as pie to get ready.

Cast Iron Pigs In a Blanket Ingredients:

  • Cased Meat Sausage, take your pick to suit your style:   Simple Sow Style – 6 bun length hot dogs cut in half  |  Poppin’ Pork Style – 6 Jalapeno Cheddar sausages cut in half  |  Bueno Beef Style – 6 Chorizo sausages cut in half
  • Thin Sliced Hickory Smoked Bacon – one pack
  • 12 – 18 oz of dipping sauce divided up into several ramekins or plastic bowls (If you don’t like our suggested sauce, go hog wild and create your own)

Dipping Sauce Ingredients:

  • 10 oz Canned Cranberry Sauce
  • 3 to 4 TBSP Coarse Grain or Seeded Mustard (amount depends on how smooth your like your sauce)
  • 2 TBSP Apple Cider Vinegar

First Things First: Fire up your Ooni oven or grill first to let it get up to a stable temperature. Adjust the heat for 665F (350C). Then put your Ooni Cast Iron Sizzler or Cast Iron Pan in the Ooni to warm up.

After you have cut your sausage pieces to the desired length, remove your bacon from the pack all at once and place on cutting board. Using your chef’s knife, make one cut right down the middle of the bacon pieces.

Pull one piece of bacon from the side and wrap it snugly around a sausage piece. Repeat until all sausage pieces have at least one piece of bacon wrapped around them. Set aside while you mix your dipping sauce. If you already have a favorite ready-made sauce, skip to the next section.

Make the Pig Sauce

Gather your small bowls or ramekins alongside the glass mixing bowl.

Put your cranberry sauce, mustard and apple cider vinegar together in the bowl and whisk until it’s a uniform color and texture.

Divide sauce up into your small bowls or ramekins and set aside.

Bring your wrapped sausages to the Ooni oven or grill and pull the Cast Iron Sizzler or Pan out and place on a trivet. Place all your sausages into the heated cast iron quickly and then return to your Ooni oven or grill.

Cook on one side for 4 minutes. Remove the Cast Iron Sizzler or pan and place on trivet. Use the tongs to flip each sausage over in the pan and return it to the oven or grill. Cook for another 4 minutes or until the sausage is fully cooked through the middle.

When they’re done, pull the Cast Iron Sizzler or pan from the Ooni oven or grill and put them on a serving dish or cooking sheet right away, next to the dipping sauce bowls. They always taste best when steaming hot!
